B12 is the one you'll definitely need to supplement unless you’re eating a lot of fortified foods.
You might want to supplement vit D if you're not getting a lot of sun, which I assume you're not, posting here and all.
That's as far as the musts go. The rest you can generally get by making sure you're eating a varied and balanced diet. For example eating whole grains and legumes in order to get a lot of iron, zinc and protein, leafy greens or tofu and fortified plant milks for calcium, canola oil, ground flax and chia seeds or hemp seeds for omega-3s.
Try entering some foods into Cronometer or googling their nutrition data if you want to grasp what nutrients certain foods are rich in.
There are guides online to what you need to pay attention to if you want to follow a healthy vegan diet. Just remember, titles like nutritionist and MD sound credible but they are not necessarily qualified to give dietary advice (nutritionists don't need a formal education at all while doctors usually don't specialize in dietetics), and of course blogs and news sites don't count either. It's best to look for advice from RDs, or registered dietitians.

sure you can plug your diet into chronometer, and pop some lab produced b12 (which isn't actually the same as animal derived b12), and say "see I'm healthy! I'm getting all my nutrients!". But the reality is that you look and feel like shit.

So I would just suggest that looking with a microscope into your diet, into specific vitamins and nutrients that need to be supplemented is the wrong approach. take a step back and listen to your body. what does it want to eat? what are you drawn to? b12 pills? leafy greens?

They'll probably be perfectly explicable mechanisms discovered in the future for why that is. I don't think nutritional science is inherently flawed. It just hasn't figured everything out yet. Part of the problem is limitations to the studies they use to learn about these things, where they probably don't have a lot of very large sample sizes involving people over the entire course of their lives with exact data on everything they eat each day. So that creates a lot of opportunity for gaps in knowledge when you're only focusing on much shorter term time spans, are limiting which kinds of diets you're checking out, and are only testing for certain kinds of nutrients on their own as subjects instead of doing much more complicated analysis of how many different nutrients behave in conjunction with each other for a given patient with a given set of genetics and environmental factors.
