Why is tonkotsu the best kind of ramen?

Tonkotsu is good, but sometimes it can be a bit rich on the belly. When I'm feeling a bit off, I prefer shio ramen. My breakfast ramen of choice is usually either miso or shio.

actually the best is miso tonkotsu - the miso cuts the richness of the pork broth and adds a tanginess normal tonkotsu is missing

well, agreed, but that place is a mediocre chain store for tourists. broth is watery af

At first it is like ... this is the best thing I've ever eaten. Several spoons in and the hot greasy slightly thick collagen and floating bits of bone marrow start to get a bit rank. It is delicious, but I prefer a touch lighter, a touch brighter, miso all the way.

Because creamy meat broth is better than watery miso broth. Just drink the soup if you want that. With the noodles and chashu and egg and all that, the thicker broth works better.

It is good. Dudes probably just bitter that the place is mainstreamed and packed with weebs in NYC now and hes no longer unique of liking his "straight from japan" noodles

it's literally the worst tonkotsu I ever had in japan. overpriced, watery, and the place is always full of chinks. it's for tourists who are too scared to order at a small restaurant.

I honestly prefer shio ramen the most, since it's a lighter flavour, but Tonkatsu is good, especially with a lot of heat added to it, pic related, Haneda Airport, fantastic ramen shop.

Yeah why don't they add a touch of vinegar or some sort of tang in their soups. I'm just hit with a taste of salt and fat like a dull knife
