Saute some peppers and onions in butter and chilli powder.

then after boiling your 'roni, drain the water, add about double the normal milk, a table spoon more butter than you would normally use, and put it on med low heat.

Toss in some freshly grated sharp cheddar, the powder, then your sauted ingredients, and stir until smooth, with a bit of chilli powder to taste.

Personally I always grab their "premium Mac & cheese" with what is basically Velveeta. but this should still work on the basic recipe.

Oh and if you want the crusty top, I'd put a sprinkling of moz and parmesan on top before tossing it in the oven until it browns.
