Do you think this recipe will work with dates instead of sugar?

Ingredients:

2/3 cup cacao powder
1 cup meme sugar
1 tsp baking soda
pinch of rusty Pakistani meme salt
1 cup unsalted almond butter
1/2 cup aquafaba (chickpea water)
1 tsp vanilla extract
1/2 cup vegan mini chocolate chips (if you use large chocolate chips you’ll want about 3/4 cup or more)
Directions:

Preheat oven to 350 degrees F.
In a large bowl, whisk together the cacao, meme sugar, baking soda, and salt. I recommend sifting all of these ingredients beforehand as coconut sugar often has many large clumps. Set aside.
In a medium bowl, whisk together almond butter, aquafaba, and vanilla until combined.
Add the wet ingredients to the dry ingredients and fully combine until the mixture is a nice doughy texture. Stir in the chocolate chips.
Line 2 baking sheets with parchment paper. Scoop the dough into balls (about 2 tbsp per ball) and place on baking sheet a few inches apart from each other. This mixture will spread very nicely so only allow up to 12 cookies per baking sheet and spread them apart nicely.
Bake for 10-11 minutes. In the oven the cookies will rise well, but once removed they will fall into nice thin and crispy, yet soft cookies. Remove from the oven and allow to cool on the baking tray for 10 minutes. Delicately transfer to a wire rack to for further cooling. Once cooled, serve and enjoy!

This. I think a fresh-out-of-the-oven, perfectly baked chocolate chip cookie is easily the best cookie period. That mix of gooey + crisp is tops.

I'll eat any cookie (I fuckin love white chocolate macadamia nut cookies) and normally enjoy loaded anything, but simple cookies can be great.

It depends. I went to this place that has a line of people coming out of the store almost every damn day and I tried all of their cookies. I thought I would like the super chocolatey one, but I ended up preferring their chocolate chip and walnut one more. It was the first time the walnuts seemed like an asset to a cookie rather than a detriment. Made it taste way less sweet.

I think, ultimately, I prefer a balance of flavors.

this is the recipe I use, I've made some modifications. I brown all the butter and use their royal Icing recipe to make cookie sandwiches if I feel like being a monster. I use this recipe as a base to make confetti cookie and really add anything I want. I want to try playing with exacts, maybe bourbon extract in the cookies and something to pair with in the icing.
