I can't stand when you have to shout over the music to talk to other people at your table, listen to someone's kid having a meltdown, look at flies buzzing around, or deal with a shitty rocking table. Going to a dine-in restaurant is primarily a social experience when you're in a group. If all I wanted was good food, I can make it myself for half the price. I think there are probably a lot of restaurants out there that get away with overcharging because of status and location, but a truly exceptional meal is very easily identified. The top tier ingredients and the care with which they are prepared can be incredible.

There is also diminishing returns, is a meal at a well know high end establishment really 50X better than a good shrimp fried rice? In my opinion, almost certainly not. Otherwise I would be scrimping and saving to be able to hit up Alinea a couple times a month.

But it is cool to have an experience once every couple of years at a truly high end restaurant. The service is insane, the wine pairings are insane, they do things I could never do in my home kitchen, the atmosphere that is created to put you at ease, and ingredients and dishes I have never been exposed to all make it worth while.

But the 200 euro is an experience, you start around 6-7 o clock have a supper, have some soup, something in between, main course, and desert.
And bam it's almost 10 already.
Those "fancy" dishes are usually very rich in fat which is why it fills hard eventhough it's so little.

The left seems to consist of mostly rice and vegetables, which are cheap ingredients, with long shelf lives that can be easily bought in bulk, stored or frozen for ages. Although there is shrimp there, there are not many, and shrimps can be extremely cheap, since there's lots of varieties and varying qualities, and you can bet these are cheap, low grade farmed shrimp, that come frozen and prepackaged in bulk bags. All the ingridents used for cooking are cheap as well, basic oil, salt, msg, cheap bulk condiments like soy sauce, flour, water. They definitely don't use any fresh spices or herbs. And it's all cooked extremely fast. Guarantee it's lowest quality battery eggs used for the rice as well.

The right however is no doubt chilean sea bass, an expensive fish and the major factor in the price. It's also a generous portion, and you can guarantee that all the ingredients used are fresh and of the highest quality. Using heirloom tomatoes, fresh herbs, olive oil, butter, even the salt will no doubt be an expensive premium variety.

What are you even on about? Taste is subjective. To you a chilean sea bass might not be worth it for a variety of reasons, you might not like the taste, you might not appreciate it, you might have a low income and deem it too expensive. These are all your personal opinions though, and not everyone will agree with you. Some people might absolutely adore sea bass, and/or hate Chinese food. They might be wealthy and consider $30-40 to be a meaningless amount of money, or maybe it's just an occasion that they want to celebrate by eating a special meal.

You also talk like restaurants would choose fancy ingredients based on the simply fact that they're expensive, as if to boost the price of a dish, but that couldn't be further from the truth. They simply choose the produce that the chef or restaurant owner likes, and deem worth it for their particular restaurant and what their particular customers would expect and want. If they didn't think an ingredient was worth the price difference, then they simply wouldn't use it.
