How much onion do I need to put?
I tried making guac last week and I put a whole little onion in and it overwhelmed all the other flavors.
Also, what can I use to crush the ingredients if I don't have a mortar? Want to try making Jeb's "famous" guac.

depends on the kind of onion and how sharp it is. I like sweet onions and do like half a large onion for 4ish large avocados. two tomatoes, half a bunch of cilantro, juice of one big juicy lime or two smaller ones. plenty of salt.

if you wanna kick it up a notch, roasted garlic or chipotle peppers can add a good kick

There are a ton of ways you COULD use it, but the BEST way? Find a recipe for some spicy fucking pork shoulder (to be shredded for taco meat) and then use guac to temper that heat. Spicy charred meat, good guacamole, diced onion, cilantro, salsa, toasted corn tortillas? I don't give a shit if you kill me bro because I'm already in heaven.
