Grilling on a pan or griddle should work, just evacuate the excess fat.
Lamb is a fatty meat. You can't do a lot with it outside of grilling or roasting.
If you really want something complicated then trim the meat and fat and make burgers. Use the bones for a broth or a soup.

OP here, ended up pan searing with butter and garlic then oven roasting for a bit til crispy on outside.
