There is an element of bravado to it. When I was a teenager I would order my steak blue because I thought that was the most badass way to eat steak.

Steak tartare is quite bland but there was a tapas place near me that served it, and it had a stronger flavor. Different cut of beef I guess.

Did you at least have it? I guess it's a dish to show off the food safety of your country's raw meat supply chain. I wouldn't order it abroad. That Korean fusion in your pic will not taste like what you expect from a regular steak tartare. Wouldn't have it either, that abomination of Thai fusion steak tartare I had once was enough for a lifetime.

I don't like it when its minced. I like it when its tenderloin cut up into 5 to 10 mm cubes, then it also has to be seasoned well. miso or other asian sauces can be good but usually salt and some small dice of onion is the best. I don't really go in for the yolk either.
