It’s getting memed right now in restaurants like Siracha did but it’s pretty good. I like young kimchi since it’s milder in flavor and has a fizzy kind of taste. Usually Koreans eat it with a bunch of other small side plates called banchan.

I made my own two weeks ago. Made cabbage and radish kimchis.

It's pretty versatile. Cabbage you can out in a lot of soups and stuff. Radish is a great snack. Lots of flavors. I feel like I could do better the second time too.

Spicy. When it's recently made, it's just spicy fresh cabbage. I guess because it's made with gochujang, there's a tiny bit of a savory taste. It gets sourer as it ages, I personally like it when it's a little sour but doesn't attack your tongue. Not sure how to describe it otherwise, because typically you don't eat kimchi by itself.

In the Balkans we call it "Turshia" and most people make their own in winter in a barrel in the basement or or on balcony. They put in other vegetables as carrots and sour tomatoes as well as cabbage.
It's a comon side dish for grape/plum brandy (Rakia).

It's weird. One of my favorite kimchis (No1 Sons) is only aged a week and is perfect. Some stuff I got from a philipino joint was horrible tasting (possibly the oyster sauce?) and very fibrous. Let it sit for about a year now and it's delicious albeit extra sour.
