Pot roast or other comfy cabin food

Some good friends of mine took me to stay with them in their cabin to help me with my constant drinking and depression after I lost my job due to covid. They are inviting their family over for dinner Saturday and I offered to cook for them to return the favor.
My host expressed to me that her family loves "meat" but she only knows how to cook chicken and fish. My mind immediately went to venison but I don't have access to any/ don't want to offend any picky eaters. So I'm leaning towards a classic beef pot roast with potatoes, carrots and onions.
I have access to an instapot, oven and stovetop. They don't have much seasonings but there is an herb garden with parsley, sage, rosemary and thyme out front. Her brother who will be joining us is going to discuss hiring me for his business and I want to impress him, but I also have to ride in a car with him for 2 hours back to the valley after, so no chili or foods that might make us gassy.
Does anyone have any good pot roast recipes or other comfy homestyle beef dishes for a chilly evening up north? Open to anything, doing a grocery run tomorrow and I'd gladly post pics of the results. Anything to get the ideas flowin. Thanks bros.
