They've been bred to be less bitter over time. The ones available at our local supermarket are actually more leafy and sweet unless you overcook them. The ones we can get around Christmas time on the stalk are more like they used to be, ie more dense like miniture hard cabbages that are less forgiving of being overcooked. You can eat them raw in a coleslaw but I've also found a few ways to cook them to perfection:

- If using pan then cut them in half and sear them over high heat until you see caramlisation. Then add a small amount of liquid (like some do during Chinese stir fry) and continue cooking until done to your preference, but still retaining vibrant green colour. I leave them al dente.

- If using oven then spread them out well and cook quickly at high temp until caramelised (around 18 mins at 200 degrees celsius but will obviously depend on the amount)

- If using microwave then put them in a pyrex bowl with small amount of water just to create a bit of steam (never cover them with water). Cover bowl with clingfilm or a microwave safe plate and cook for a few minutes until a knife slides through but still retaining vibrant green colour.

Ah, the modern factory fruitcake. I used to hate them until I started making dark rich fruit cakes for Christmas (pic related). The main problem with the store fruit cakes is that they don't use good quality ingredients and they don't cook them properly.

You need to use good quality dried fruit, not luminescent crap with all the flavour replaced with syrup. If you want cherries then use the proper dried ones. Those are expensive so I tend to go with currants, sultanas, flame raisins. If you want to use mixed peel then make sure you get some with the pith removed otherwise they will give a bitter tang aftertaste.

Fuit cakes are cooked at low temps for a long time. Don't cook them like a normal sponge cake otherwise they will dry out at worst or just be like a sponge cake with dried fruit in it at best.

Soak your dried fruit with brandy/orange juice/hot water for 24 hours. This will stop the dried fruit leaching the moisture from your cake after it has been baked.

If you want marzipan make sure you get one with a high percentage of ground almonds rather than one that is mainly sugar.

Fruitcake traditionally uses fruit that's been preserved in some way; candied, dried, etc. Fruitcake goes all the way back to Roman times (possibly older) as a calorie dense winter staple that used up what was left of the summer/fall harvest. I didnt like onions or tomato's for the longest time. Onions since there really tangy bitter taste and texture just made me gag and tomato's just not tasting good to me. It toulk getting high and appreciating home-grown tomato's to realy get into them and atleast tolerating onions in dishes. there is something about peppers I just cant deal with eating, not so much the spice but just the texture throws me off every time.
