Do you guys know of a book that teaches cooking fundamentals? Like, not only does it tell you that doing something a certain way is good, but it tells you why.

AB's "I'm Just Here for the Food". It's written for beginners, and also has recipes to try out the various techniques it covers. If you're interested strictly in the whys try "On Food and Cooking".

The Professional Chef, by the CIA, you can find it in pdf or at a used market for cheap, it doesn't go really deep into chemistry but it's really good at explaining the fundamentals and the principles of cooking

Jacques Pepin literally wrote the book on cooking technique. Otherwise, Kenji (>>14110912) and McGee (>>14110509) are what you're looking for. If you're interested in armchair stuff and have a stomach for the occasional meme, find a PDF of Modernist Cuisine's 6-book series.
