What's your go to dish /ck/?

Mine's a basic marinara sauce.

olive oil on medium high, wet some onions with a lot of garlic and tomato paste
deglaze with red wine
add can of tomatoes, add fresh basil and dried oregano
cook some penne on the side (good bronze cut penne) to aldente
when sauce is thick enough, marry pasta and sauce
add salt, pepper, and cayenne to taste
top with parmesan regianno, serve alongside with red wine (preferably Tempranillo)

Marinara like yours but with grated carrots added before the tomato paste.

Alternatively dandan noodles which is just boiling noodles in broth, adding some of the hot water to sesame paste/some other nut paste/butter alongside homemade chilli oil (which lasts for a long while) and some soy sauce.
Fast easy tasty you can add greens or meat as desired.
