Turkey should be chicken, lamb is certainly third but is so much less popular that it might not be worth mentioning.
The beef burger is overstuffed. There's only so much you can do to improve structural integrity beyond toasted rye, wrapped and skewered before you have guaranteed bun bursting or crouton soup.

Bun
Condiment
Something for crunch, almost always lettuce.
Something juicy, almost always tomato.
Patty
Bun

Everything else is an optional extra and I tend to prefer as many as possible, while remaining synergistic and maintaining structural integrity.

Mcdonalds are the absolute worst burger makers in the world. Skimp on the patty, falsely advertise the presence of onions and pickles, nothing for crunch or juiciness (except an abundance of overpowering sauce) and that's it.

Spicy brown mustard
Arugula
Grilled onions still in rings
Muenster cheese melted on meat
Spicy pickle relish
S&P on meat
Medium
Olive oil mayo
Bun
That's it thats all you need. Maybe grilled shrooms and a change of cheese. Burger toppings become such an clusterfuck/overcrowded mess when you have three kinds of meet and a fried egg. If I want a chili burger i go to a place that makes chiliburgers and nothing else. Every pub/14+ dollar burger place feels the toppings should be a pissing contest withsome fuckedup honey or jam thing and then there are those Bacon is life mongoloids. Also don't put pastrami on a burger. Nothing about those two meats' flavor or composure make them good neighbors. If it were a burger with a single thick patty and stronger flavors then sure but for a smashed patty? Fucking forget about it; American is the only valid choice. Adding moisture and a creamy texture is as important as the taste for thin-patty burgers and American cheese can't be touched in that regard - plus it's traditional.

Moisture is not the job of cheese, you're looking for mayonnaise.
Creamy texture is counterproductive, you're trying to add crunch to balance out the texture of the buns and patty.
Not to mention your abandonment of flavour.
There is no use case for American cheese.

>> No.14071342

Always start with the bun. Packaged buns are trash, nothing but puffed up processed flour and corn starch molded into the shape of bread. Go to the bakery and get buns that'll actually bounce back when your press on them. No matter how good your toppings are, your burger will always be shit if you don't have a good bun.

My personal favorite:
>Bun
>gorgonzola crumbles
>patty
>sauteed red pepper and red onion
>bun

Melted cheese isn't moist where you live?

>Creamy texture is counterproductive, you're trying to add crunch to balance out the texture of the buns and patty.
That's what the lettuce and pickles are for, as well as raw onion if you decide to opt for it.

>Not to mention your abandonment of flavour.
There is no "abandonment" you limey fuck; the cheese being gooey, creamy, mild and salty is an integral part of the classic cheeseburger experience. A cheeseburger is neither healthy nor balanced; it's a gut bomb of meat, melted cheese and white bread

It's not that creamy, it's not that mild. Gooey is counterproductive.

Gooey is entirely appropriate for cheeseburgers.

Not the one I described, which is the traditional cheeseburger. As nice as that flavor from the grill is, the flat-top remains the eternal and unambiguous champion of burger cookery.

"American Cheese" in its most basic form is literally just emulsified mild cheddar.
