The best fries I had in my life over twenty years happened to be shoestring. Every subsequent order of fries I've ever had, I thought wistfully of that side basket. I only got to taste them once, then the privately owned pub was replaced by some commercial line. Their flavor was singular- i have no idea what they did with them. Wish I could tell the chef about the impact of that single basket.
