being from new york I've had much very good ramen, (no that chang place isnt' on the list)

I liked the ramen in japan a lot though, I had 2 bowls I didn't like
one was at 3am out of a machine, the other was some specialty of the house with a spicy fish topping and I just didn't care for

aside from that the best ramen In NY is an 8/10 compared to the best ones in japan being a 10/10
so it's still good, but even the cheap shitty ones in japan were all pretty decent and worth it. I just got sick of eating the stuff

Plenty of Japs eat instant ramen and instant ramen is a Jap invention that's become popular world wide.

Throwing on shit like eggs, green onion, even beef, etc is still authentic to Jap ramen. You can find mayo and corn ramen in Japan by traditional Japanese ramen chefs for example. It doesn't mean those are typical ingredients but I'd still consider it authentic to some extent.

Its mostly a hipster way to judge superiority of pretending to know a culture. You don't need an actual ramen chef to make something "authentic", you could find things less "authentic" from those people ever.

My gf is from central veitnam so I'm getting all my info from her, but I think most pho is the us is from south veitnam (probs cuz of it being bought over from war refugees). In central vietnam the broth is sweeter and there's more often both beef and poached chicken, and in the north it's saltier, and more oily. I really don't care for the northern style pho. Veitnam is actually crazy diverse culturally despite the size of the country

Exactly. With pho you always want your broth to be clear and you serve them with the same rice stick noodles (banh pho). You either get it right or wrong. Ramen comes in all types of cloudiness and the type of noodles are wheat flour instead of rice. When you add in different tare seasoning, oils and toppings you can see how it lends itself to being produced by a fuckton of different shops with their own recipe.

Damn that is some good looking ramen. When I lived in Tokyo this was my favorite style. Just fucking super high quality shouyu with similarly high quality toppings. Multiple types of chashu, great menma, GOD TIER ajitama... Fuck. So good.

I spent some time in Japan, so I believe so. The biggest difference between Eastern and Western ramen is the broth itself. It's so much more complex in Japan, to the point where all Ramen I've eaten back stateside has just been bland. With the exception of the So-Japanese-They-Don't-Speak-English Ramen places

Does anyone have any recommendations for a website where i can purchase good noodles for a creamy miso paitan pork belly ramen? I used to get nama noodles from yamasho, but no longer have access to the distributor due to 'rona, but my staff and a lot of the regulars really miss this recipe. I think it would be a nice treat to make a batch to share with people, but i would need to get the noodles out of pocket and I'm not sure where to get quality noodles in non wholesale for restaurant quantities. Any advice would be appreciated. Thx /ck/.
