Pasta with gorgonzola sauce and walnuts. Skip the walnuts if you want.This recipe suggests to sprinkle some thyme over it, not really necessary. Also Trofie pasta is probably hard to find, just use penne. You should be able to understand what to do without google translating the full description:

Gorgonzola dulce 350 g
Pasta 320 g

I make this dish once in a while. It always impresses people I make it for, and converts people who say, "Eewww... blue cheese," into people who are at least willing to give it a chance. It's essentially Alfredo sauce but with blue cheese instead of Parmesan.

Prep work for enough to feed two people takes about a half hour. The dish itself comes together in under ten minutes.

Equipment:
>Knife
>Cutting board
>Medium saute pan
>Pot large enough to boil 1lb pasta
>Strainer to drain pasta

Ingredients:
>Blue cheese of choice (Gorgonzola preffered. Roquefort an acceptable substitute. American "blue cheese," and honestly don't even bother.)
>Pasta of choice - Gnocchi preferred. Conchiglie, farfalle, and fusilli are all perfectly acceptable.)
>Heavy whipping cream
>Garlic
>Tomato
>Fried bacon, well done but not burnt.
>S&P
>Butter

Optional:
>Fresh basil chiffonade
>Chicken stock

Prep:
>Cook pasta of choice slightly less than al dente. Drain but do not rinse.
>Dice tomato
>Fry bacon. Drain and let cool. Coarse chop into something larger than "bacon bits," but smaller than bite-size. Maybe something about the size of your thumbnail, I guess?
>Peel & mince garlic if necessary, or open jar of minced garlic if that's your style.

Once all your mise en place is set:
1. Turn on burner to medium/medium high (5, 6, or maybe 7 depending on your pan/burner) and let it come up to temp.
2. Start with a light tsp of butter in your pan. Let it melt completely. The pan should be just hot enough for the milk solids to sizzle, but not hot enough for them to brown or scorch.
3. 1 tsp of minced garlic into the pan.
4. Stir it up some. Get it coated in the butter. Let it cook, but keep it moving. Do *not* let it brown. 30-45 seconds tops.
5. Add cooked and drained pasta. Toss the whole thing to get the garlic mixed well into the pasta. This will help keep garlic from burning and spread the flavor around.
(5a. Optional) Add a splash of chicken stock. By "splash," I mean maybe 1/3 cup. Let reduce.
6. Add enough heavy cream to cover the pasta 1/2 to 3/4 of the way, but not all the way. Let it start to boil. Don't let it boil over, obviously.
7. When it starts rocking, crumble in your blue cheese. You want at least enough to tighten the sauce, but use as much as you like if it's your thing.
8. Toss thoroughly, but keep the pan hot. When the sauce starts to pull away from the edges, it's done.
9. Pour into a dish. Top with diced tomato, chopped bacon, (optional basil), and a little more cheese.
10. Serve.

50ml milk
250g gorgonzola

is all you need. Melt the cheese in the milk on *low* temperature lest it curdles. Add pepper and you're done. Serve with steak and potatoes or pasta and you're good.

Alternative:

Do a caramel coating on pecan nuts, take any kind of sweet / sour fruit. I suggest grapefruit or grilling some pears. Take caramelized pecan nuts + gorgonzola and grapefruit / grilled pears and serve with salad.
