What's you opinion on the proper amount of pasta to be served with an entire standard jar of tomato sauce?
I like to do the whole "cook your pasta al dente, add pasta water and finish in sauce" method, but I somehow always fuck up my ratio.
Opinions are invited for either Alfredo or Marinara.

I've never treated sauce like this-- pasta defines the amount of sauce, not vice versa. I usually plate the pasta and eyeball the sauce, anyhow.

Alright, this thread has been useless. I was looking for a specific ratio.
I've just browned some ground beef, got it up to a simmer along with 24oz of sauce, and 12 oz of water for 45 minutes.
Threw on my pasta (16oz) and skimmed 2 cups of pasta water from it.
Brought it to a boil, and then finished my pasta in it.
Tell me if I am fucking retarded or not.

Straight the fuck up, everyone knows that you make your pasta al dente (or a little less) and then add a bit of the pasta water to your sauce (because the starches help it stick and the salt is just tasty), and then cook it for a minute or two in the sauce to finish it.

Your numbers sound like you're feeding 6-8 people.
In general, I use about a third of a box (1 lb) of pasta to 1/3 of a jar of sauce to feed two people, assuming 1 side dish, and moderate amount of onions, peppers and mushrooms of my own to add to the sauce.
Even that's a generous helping.

if you are going to use jarred sauce make an oil infusion and use half the can

>onion
>red peppers
chop garlic and onion
add red pepper
simmer the onion for 1 min
add garlic, simmer for 1-2 mins (until just golden)
add sauce and herbs (basil, oregano, dash of marjoram)

you can play with this by adding fresh tomatoes, tomato paste, and so on

I use 1 can to 1 box of pasta. If you're going for plain pasta with sauce it might be a bit dry though, in which case you want to use about 12 ounces of pasta rather than 16. Save the rest for later.
Canned sauce is pretty watery normally so it will reduce quite a bit when you simmer it with the pasta.
My favorite way is to brown some beef with onions and garlic, then deglaze with the pasta water/sauce and maybe a spoonful of chicken MSG.
It will instantly be hot enough to keep cooking the pasta for a seamless and quick one-pot meal.

This entire being broke thing is just reminding me of when I was 15 and staying with some punk friends in an industrial park. We would weekly make some red beans and rice, and it was just referred to as "the food".
It got us by.
As of late I've been doing better, using stock to make the rice/when soaking beans, throwing some butter and spices in there- but those were some interesting fucking times.
I do miss "the food", though.
