A few days ago I made some chicken on the cast iron. simple recipe, Some Chicken breast with Lawry's Seasoned Salt, black pepper, dredged in flour and pan fried. It tasted good but I felt like it missed something, what are your thoughts guys? served it with oven roasted potato wedges and steamed veggies.

I actually did something similar last night, but it was chicken breasts that I pounded thin. They were okay but not amazing, how do you keep them moist?

>> No.13970313

Butterfly it to cook quicker, retain moisture.

Make a pan sauce with lemon, tarragon, garlic, butter.

I always finish it in the oven after pan frying it. I like to mix the seasoned salt into the flour. pan fry it in a ton of butter

oven finish always has them come out really moist
