Hey /ck/ I have a problem.

I have a char-griller brand gas/charcoal grill.

BUT, I can’t cook pork ribs worth a shit.

How the fuck can I cook pork ribs with a nice crispy bark, but tender and falling apart on the inside with just a charcoal grill? I don’t have one of those little metal cylinder things that keep hot charcoal in them either. Please help. Please respond.

Cook them in the oven at 350f for an hour in some fruit juice, like pineapple or apple Jews
Then braise them on the grill with whatever sauce you want.
This is rudimentary rib grilling without having to think.

this thread is full of idiots. get something to hold the coals on one side of the grill, put the ribs on the other side with the lid vent drawing up through the meat. try to keep an even temp between 180-225, your grill is going to make this a pain in the ass. smoke for 4-6 hours, then start spritzing the ribs with a mixture of apple juice, brown sugar, whatever the fuck you want, just make sure it has sugar to caramelize. foil your ribs if you want them to be steamed and soggy pieces of shit. falling apart means you over cooked them.

it's incredibly easy and takes 5 hours of mostly unattended time. everyone is locked down so it's a fun thing to learn. but you probably eat fast food and microwaved shit in the name of "convenience"

I smoke mine for like 12 hours, starting with a hot smoke, moving to cold, then back to hot. I use a "mop" instead of a BBQ sauce, made basically of vinegar, sugar, water, chili pepper, and some spices. The only shitty thing about this method is that you have to mop the racks every 1/2 hour or more, but you end up with a vastly superior rack of ribs compared to slathering that shitty ketchupy sauce all ove them.

Here’s what to do:

Get ribs and boil them in Coca Cola/ Pepsi / Dr Pepper until they are brownish instead of red
Season (salt, pepper, rub)
Wrap them in tinfoil
Put in grill 5 min each side
Take out, douse them in bbq sauce
Put in grill for 3 min each side
Douse them in bbq sauce
One last time in grill 2 min each side

If you want to you could remove the foil during the last grilling

turn the heat back a little based on the photo.
ribs vs pork shoulder... higher temp, shorter cook by weight for ribs.
consider doing them the same way you would a chicken.

put the ribs on one side with the burner off and use the other burners to get a circular heat, your problem is direct heat under the ribs I imagine. keep it about 225 to 250 degrees, Slow n low this way is best use a AL foil bag with soaked wood chips if you want smoke. you can finish in the oven if you want in a covered aluminum foil till the rips are tender.

Bark is obtained by using a binder like mustard rubbed all over and then use a nice rub of your choice, squirt the ribs with water using a squirt bottle every hour. Cook time could be 4 to 6 hrs, maybe longer depending on the rib.. good luck, you can do this.

OP, this is what I do and people talk about my ribs for the next week because they're so good.
Get yourself a nice St Louis style cut. You're going to want to season them the night before and toss them in the fridge. The following day, get your grill up to about 225 and toss a chunk or 2 of wood on the coals (I prefer a mix of hickory and cherry). Maintain that temp and smoke for about 3 hours. Take them off the grill, wrap them in some aluminum foil or paper with some a couple of small pats of butter, a drizzle of honey, a sprinkling of whatever rub you used, and just a tiny splash of apple juice. Fire them in the oven for 2 hours @ 250. Unwrap and throw back on the grill, meatside down to get a nice little char on them. Flip over, cut the heat to the burner directly under them and finish on indirect heat. Brush a little sauce on them once you do this and again in another 10 minutes.

Yes, this shit takes a while, but you will have the most amazing ribs you've ever had. If you're expecting guests and want to do it ahead of time, you can cut the heat to the oven and let them sit in there until your company arrives. Then fire up the grill and you can have them completed in about 20 minutes.
