A palate happens over time. It happens from some life experience, from new luxury dining experiences (whether that be a famous hotel buffet, someone's wedding, some travel, etc). It happens from being in a place of safety, where no one is going to mock them or judge them for not liking it, in other words even though they are an adult, you should be respectful to them in general even if they act like a child. Reverse psychology in some aspects.
Try the reverse psychology like you would with a child. Built up the promise or anticipation. "Oh, I'm craving cajun food this week, gonna plan to make some this weekend" followed by "oh, gonna soak these beans, proper red beans from scratch are best" followed by "wanna come watch? I have Emeril on the TV and he's making what I'm making tomorrow, I want to see if there's anything I don't remember' followied by "I'm draining my beans and about to start my Trinity and roux step, wanna come help me prep?" ..
Make him a part of it. Chances are, if he's had time to anticipate it, enjoy the buildup, maybe enjoy doing the splash of alcohol Emeril BAM'd at, he might even be willing to try it. He'd have smelled it cooking for hours and saw exactly what went into it.

When you are short order cooking for dinner, go ahead and make his crap that he likes, but don't do it daily, batch cook it and have it available as leftovers he can microwave and/or eat what you are eating instead, a choice mind you. Take a little steam out of his getting babied and catered to, and some of the steam about "it's just not fun for me nor efficient to make the same thing daily" Enjoy your leftovers too, in the same cook once eat twice mindset.
It's a passive aggressive way to make his choices less enjoyable than a new thing each day. Your opinions matter as long as you respect that he might eat-to-live and not live to eat as the rest of us do :), don't totally knock yourself out for the 2nd dish for him each and every time. Not a slave.

Young humans evolved sensitive bitterness receptors as a defense mechanism, as they are more susceptible to toxins. Yet, if someone was picky later in life and went like "eww those berries are a bit mushy, hasn't the big mac been invented yet?" they'd die of malnutrition.

I spent 7 years in the UK as an undergrad and then PhD student. I was in a very international city.

Every picky eater faggot I ever met came from a northern European background. Brits, Scots, Americans, Germans, Nordics and Russians especially.
The only exception to this rule rule was people from central asia, who had never seen the sea in their lives and were disgusted by prawns/crabs etc.

My roommate has the diet of a fucking toddler.
He will literally not eat a meal if it isn't some variation on cheese and carbs. Straight up refuses to even taste any Asian or Middle Eastern dishes. In the past few months the only things I've witnessed him eat are mac and cheese, grilled cheese, and pizza. I was out at a bar with him once, and a mutual friend put down ten bucks on the table for him to eat a single carrot stick. My ex-girlfriend is very picky, for instance she does not beans unless it's just the refried, and even then, probably not. Green peppers, onions, mushrooms.

How does a girl get so fat with so little choice in food? God damn, I made simple meals like spaghetti and meatballs with the sauce having the three above, she wanted me to seperate the meatballs from the sauce and pasta. When I make chicken, rice, and beans, I have to eat the beans all myself. I like beans, but damn I have to consciously reduce the portion size to 1 person. I eat rice,beans, eggs, every single day. Does that mean I'm picky? NO! I can eat anything, at least try it! Do I like octopus? No! it's too rubbery for my tastes, but when my friend bought the plate to share between the four of us, my ex starts freaking out and makes an entire show instead of saying "no thank you."

She makes this "chicken" and adds all these spices, and white wine, oh don't forget the white wine, that's her "secret" to the dish, not the bbq sugar rich sauce she dresses all over it. My mother LOVES to cook, she makes this latin american recipe where you get sour oranges, achote, pork, dress it all, and wrap it in banana leaves in a pressure cooker (in the latin countries they made a hole and lit a fire and cover it for hours), my ex takes a bite and says it's not good. When my mother makes a thai soup she learned in california of shrimp, alaskan cod, ginger, lime, and cilantro for flavoring, my all time favorite meal, she says it's gross and picks up mcdonalds.

OP, my bf used to only eat ham sandwiches and pasta with canned tuna/pesto (yeah, typical italian student). Breakfast was milk and packaged cookies. No veggies or any cooked fish/meat.

We started living together and very slowly he tried some of my stuff: one day it was salmon, then mackerel, then spinach/broccoli with Parmigiano on top, and now he's a normal human being that eats anything (he still doesn't like bell peppers but who cares).
