Since you missed it, the original Iron Chef was weirdly, oddly, campy. It was like those extreme obstacle course shows where people slipped off rolling logs greased down, into the water, doing a dangerous split busting their head at the same time and people laughing and commentating with stupid exclamations!
That's what Iron Chef was. Why was it better? It was hilarious, but there were judges that were so freaking intense about the aromas, and flavors, and you got this thought that maybe they had only once in their life eaten these rare things.

Because it lacks the seriousness and presentation of the original. Yes it was campy, but they wanted to win and the commentators and judges usually had interesting insights to what they were cooking and why it was impressive. Remember: they used it to help teach students as well and entertain.

Plus they'll never be able to match that charming odditiy that Takeshi Kaga put into his role.

I think one of the huge differences is that the American version is very wink wink nudge nudge about their campiness. Like haha we're pretty goofy too right??? Meanwhile the Jap version rolled with it the whole way. It was extremely over the top dramatic from beginning to end and you could sort of believe it was an actual battle between rival chefs and not just a TV show. I don't think that's true, but you definitely can't do it with the mentality that most network executives have. The show is first and foremost about the drama of competition; most executives are used to editing in fake drama in reality TV and have no idea how to present the genuine article. You see the same problem in FOX's abortions with Gordon Ramsay.

I love Iron Chef. I remember watching the OG series with my extended family. We all thought it was amazing watching top chefs go at it.

It's a silly show, but it feels like the "toughest" of the cooking show competitions.

As usual, the American television execs decided to be retarded and thought that they had to change up the format to make it appeal to American audiences more, even though the original was already wildly popular. So they made it more like every other shitty reality show, with cutaway interviews and unlikeable characters.
They also gimped the quality of the commentary by making Alton do all of it, rather than have a play by play commentator, color commentator, and guests like the original. Having more perspectives about the food was interesting, and the sports commentator gave more time for the color commentator Hattori to think and say useful things.
The chairman was garbage. He was a bad actor and tried way too hard to be a zany Jap guy and it’s just cringe
Finally, the quality of chefs on the original was obviously worlds better. They managed to consistently get people who were at the top of their field. In America, they got more garbage celebrity chefs like Bobby Flay and then held contest shows to pick new Iron Chefs. The lower quality of chefs, combined with the shitty reality TV vibe, meant that nobody, including the challengers and audience, took it nearly as seriously as the original was taken. That made the show less exciting to watch and turned it into kind of a joke that chefs who really were at the top of their game generally didn’t want to be seen on, unlike in Japan where competing on the show was really taken seriously and seen as a badge of honor, leading to really good chefs competing on almost every episode.
