Yesterday a made a crispy roasted duck for Easter and it was delicious. I also decided to take all the rendered duck fat and store it in a mason jar for future use. Any suggestions on how to use it?

It doesn't really spoil, but it can grow fungus. Other than that, which is very easy to identify, it can start to smell and taste stale or off, you won't die if you eat it but it'll fuck up anything you cook in it, so you should toss it. Usually you can use the same grease four or five times easily. Make sure to close whatever it is you're keeping it in. I hear a non screw able lid, like literally a block of wood on top of a bucket is the best thing.

If you meticulously strain all the bacon bits out of it and store in an airtight container in the fridge or freezer it will last a long time. The key to bacon grease longevity is to remove any solids with potential for rot.
