So I'm making chili and decided to give tongue a try as the base, but I'm not sure how to go about peeling it. Everywhere online either says to cook the shit out of it first or freeze and peel it. I don't want to do the former because I'm already going to be cooking it for hours in the chili and don't want it turning into mush. I don't want to do the latter because I'm worried that I'd lose too much material. Does anyone have any other suggestions? I was thinking that maybe I could repeatedly blanche and shock it until the skin loosens, but I've never tried that

just boil it like 2 or 3 hours till tender, than wait for it to be cool enough to handle, peel off the goddamned skin, it's thick in the top center and thinner around the edges and sides, it comes off easily

It's not a delicate cut that you can just fry on a skillet and eat, it toughens up significantly (a bunch for you retarded nigger level education faggots), when you begin to cook it, it only softens down around the 2 hour mark.

ah then just cook for like 20 minutes and peel the skin off, it's not too difficult but you might have to cut a little here and there, try to do it as hot as possible since it won't be fully cooked and will want to stick to the meat, it should be easy enough, then continue to chop and make your chili
