As a yankee there is no food I will drive further and spend more for than some good southern food. Brisket, slaw, mac and cheese, cornbread, baked beans. Heaven.

The raw tomato and herb in there seem a little weird. Is that traditionally southern? I had a southern mom and usually she'd top her greens with some extra salt and the peppery vinegar you get from pickled banana peppers or pepperoncinis.

I don't know. Most of the collards recipes you'll see don't include much of any other veg, so probably not.

Our family always had gardens, and garnished pretty much everything with fresh veg when it was in season.

Fair point. There's rarely a batch of red beans and rice, jambalaya, or gumbo I make that doesn't get garnished heavily with diced green onion, chives, and/or parsley. Maybe I just need to broaden my "greens" horizons.
