There's a reason they use specific cuts of fish, what they call the tools and even methods.
It's not some secret traditional japanese hidden culture but there are ground level things you should know going into it.

I think you're just worried about how to roll sushi
There are other simple things that will just show how little you know like how to cook sushi rice or what gari is.

If they have you talking to customers you are fucked.
If they start dropping words on you like Inarizushi, Uramaki or Norimaki, again, you are fucked.

Not from there and never been, but I assume they have to show you the recipes anyway. Unless they only have generic sushi like california roll and shit like that but I doubt that cause you're in Scandinavia.
