That's a semolina pudding with a red wine syrup. Extremely simple to make, yet so tasty.

Here are some pancakes I made the other day. I tried whisking the egg whites until stiff and folded them into the batter. Definitely worth the effort doing it like that, in my opinion. They turned out very nice and fluffy.

It wasn't, but I didn't put too much sauce in it, and left some for afterwards when I plated it for people. You can remove a lot of water from the eggplant by salting the slices half an hour in advance and then dabbing the water off. It was actually pretty dry, I think I should've used a bigger dish so I could fit more sauce inside.

I make sambal potatoes as an alternative to fries all the time but especially lately

>cook potatoes but cut them in large 5cm or 1/2 inch rough blocks
>when they are just tender stop boiling them and let them cool down out of the water for 15 minutes
>heat oil in a frying pan
>throw on potatoes with a lot of salt on high heat
>when it just starts to brown add chopped garlic
>when theyre almost as brown as you like them add chopped onion
>then when theyre done throw in 2 big spoons of sambal Oelek
its really fucking important that its oelek, most sambals pre roast the peppers and that doesnt work as well
>add cumin, white pepper powder, cilantro powder, more salt and some fresh cilantro if you have it
>toss for like 30 seconds over high heat so its all nicely coated

fucking delicious and addicting
If you have the time you could add some sambal earlier and over low low heat let the potatoes simmer and slowly absorb the sambal
it works better but it takes ages and you need to add more sambal

Sémola con leche. Not sure if it's made in other Latin American countries, but it's a common dessert in Chile. It's a really simple dessert made by infusing milk with spices and orange peel, then mixed with semolina until thick, poured into containers, and chilled in the fridge until firm. Usually eaten with caramel that's put into the containers before the semolina, like with flans, but other sauces, like the red wine syrup used in OP, are also used.

Fried sprouts, yoghurt & watermelon. I run a watermelon through a food processor, squeeze all the juice through a filter and cook it out for 12 hours until it's viscous and meaty like a watermelon maple syrup. The leftover pulp gets dried out and blended with citric acid to become a really sharp watermelon powder, almost like a sherbet, to cut through the salt and sweetness.

It's not really, that's what I love so much about it. Simple ingredients, simple processes, bold as fuck flavours. Having a dehydrator and blender helps for the powder, but you could replicate it with an oven and a mortar & pestle. You can always hand chop the watermelon and then crush it through a filter with your hands. From there you just need to be patient.

Breakfast mini pizzas. Ingredients: 2 Lunchmakers pizza crusts, (homemade cheese sauce with white pepper, garlic powder, onion powder, salt, milk, pepperjack cheese, butter, flour, and paprika), grated pepperjack, bell peppers, 1 egg with dried chives, diced orange bell pepper, and chopped ham slice.
