As a pasta fiend I'm interested in purchasing a pasta maker. Should I go electric or manual? The price point and possibly losing freedom are why I'm reluctant to go electric. Are pasta makers as difficult to clean as they seem, and are there any models that mitigate this? Is homemade pasta better than storebought? One of the main things I'm interested in is making ravioli specifically (though far from exclusively) given how difficult it is for me to find delicious yet not overpriced ravioli in local stores.

The dough should be dry enough that none of it sticks to the rollers.

Is the taste worth the effort? Yes. Is the effort worth the value in money saved? No.
Boxed pasta is super cheap can be stored indefinitely and doesn't taste bad. Making at home is much messier and time consuming but the taste is noticeable and fresh pasta is amazing.
Buy one but make sure to also go through the effort to make sauce yourself instead of the jarred stuff. I suggest making it meaty with italian sausage and scrapping the fond off the pan with oil and garlic

Get an Atlas and you can start with manual and buy an attachment later if you find yourself making a lot of fresh pasta.

Nah, they don’t require much except an occasional dust to get rid of whatever flour is on it and maybe dropping some mineral oil on the rollers.

Depends on what you put in it. I make better quality ravioli than anything storebought, but if I’m just making spaghetti chitarra I can sub in regular pasta without feeling like it’s missing much. The main thing is control - you’re not going to find pork blood pasta or pigeon-stuffed ravioli in any store, you gotta make that shit yourself. If you’re just doing spaghetti with red sauce it’s probably not worth your money unless you just like the idea of making it yourself.

Anytime i use my pasta maker i use a fresh, big brush to get out the flour from hard to reach places, but i know this is mostly unneccesary.
And honestly the few times i have washed it, doing it by hand is not that hard or time consuming.
Also doing it by hand is fun! i feel like a more automated might suck the fun out of making pasta.

Listen, you are not making pasta yourself because it is conveniant, you are doing it because it is fun and tastes great. its prob going to take longer time cleaning up your workspace from flour than it is cleaning your pasta roller.
Also a manual roller is a good excuse to cook with a friend!

A manual pasta roller is fine. Making the dough by hand is easy but using a rolling pin to roll it out can be difficult. Homemade pasta isnt that much bette than good quaity store brought, but homemade ravioli is miles better than store brought.

I usually do mine by hand, but to say a manual roller isn't beneficial to anyone that eats a good amount of home made pasta is just silly
the machine just allows you to go thinner than you can roll by hand, it expands what you can do but if you're just starting you don't need it.
what you do need, is a proper recipe and a scale, that will make teaching yourself dozens of times easier

Just figure out what your budget it, aside from convenience there is not much of a difference in the end result between electric and manual. You can always upgrade later on.

If you're able to splurge and feel you would make good use of it, get a stand mixer and a pasta attachment. Just don't forget to pick up a pasta crimper if you're going for ravioli.

I don't want to make a new thread because I'll probably get banned, so I'll just ask here. Is it just me, or does homemade fresh egg pasta smell like cum? I recently made a batch and had the sheets hanging on my pasta drying rack and there was definitely an unmistakable odor of semen emanating from it.

Now, I haven't actually smelled anyone elses semen besides my own, so it could also be that instead of fresh egg pasta smelling like cum, it's only my cum specifically that smells like fresh egg pasta, and not cum in general. Can anyone else confirm or disconfirm these findings?

Dry pastas are better for spaghetti and shit like that because you can cool them al dente. Fresh pastas are better for stuffed pastas and things with light sauces where you want a silky texture. Both pastas have a purpose and we should all be friends <3.

Vast majority of my pasta dishes are meat or seafood tomato based sauces. Dried pasta is king for the firm texture.

Anytime im doing german though I go for homemade spaetzle. absolutely worth the effort.
