In light of the semi-lockdown conditions in my country, I want to make good recipes with a minimal amount of ingredients. Any suggestions /ck/?

I made some bacon, onion, and oat fritters recently.
1 egg, ~1 tbsp flour, ~1 tbsp oats, three pieces of bacon, half an onion chopped, and whatever spices you like, I'd recommend garlic.

Fry the bacon, and when it's done, chop up the onion and fry it in the bacon grease, then chop up the bacon.

Beat the egg, then add the flour, oats, and spices, mixing thoroughly, then let stand for five minutes or so before mixing in the cooked bacon and onions. If need be, add a little water or milk to thin out the mix to a medium-thin consistency, then spoon into a pan and fry. Should make about three fritters.

If you want a sweet/breakfasty alternative, I also tried using raisins, sugar and cinnamon, and a little vanilla and maple syrup. Turned out pretty tasty.

Make potato dough by mixing a boiled potato with a few cups of flour, egg, S+P. Really stretches out a potato, makes delicious gnocchi, or really anything else you want to try. Really neat trick. I like adding onion, breading, and frying it, or rolling it into small tortillas, blanching, and then frying, adding any mixed veg or protein for some finger food.
