For South Texas style, pick 2 (maybe 3) of below and put into a FLOUR tortilla. A good one with some chew to it, not the fluffy discs you get from Mission. You then put red salsa, green salsa, or pico de gallo on top. No avocado or guacamole, no sour cream, no queso (dip),that’s all too much for breakfast.

>cheese (yellow and easily melted)

If I had to hazard a guess, bean and cheese is the most common, followed by potato egg and cheese. Some other tacos you will be able to get less frequently, for an up charge, and usually in limited quantities each morning are barbacoa and carne guisada.

A more recent trend is to use barbecued meat like brisket or link sausage. I don’t think there’s anything wrong with that but I would consider it fusion of Tex-Mex and BBQ. Never saw it growing up in San Antonio.

I used to make breakfast tacos religiously. Heat tortillas in a pan or over open flame, saute onions and peppers before adding eggs, add a bit of cumin or garlic powder to whisked eggs, crumble tortilla strips into pan when adding eggs, and top with cheese before placing the eggs on the tortillas.

Top with whatever.
