Mostly correct, but it depends on the dairy. "Whole" milk can range from 3.5 - 4.0% but most of the time 3.8% is the highest I've seen it go.

i'm pretty sure during processing they remove all the fat first and then re-add the desired amount before mixing it back in
3-4% is simply unremoved, that's why they call it 'whole milk', it's less processed but the fat content varies based on the cattle

interestingly enough, whole milk drinkings have lower levels of obesity than reduced fat milks
