The flavor of the crispy edges is pretty kino.
Have you tried making one of there yourself? I like a thick juicy burger as well, but smashed burgers are also delicious. There's room for both, but try one if you dont understand the appeal.

worked at freddy's steakburgers for a month or two. we made our patties like this.
not like a traditional smash burger, but cooked in a way that causes the edges to crust
just like everyone says
start with a ground beef ball. ~2.5 oz
smash directly down for half of the patty
then, push each corner of your spatula down to the grill one-by-one, then scrape around the edges.
those look like step-by-steps, but it comes out really nice if you run it in one swift motion.
newbies usually get it down in three weeks time. some people take a few months to get it right every time.

to pick it up, just swiftly slide your spatula to the patty at a somewhat high angle, but off-center. then come back the other way around until you come around in a circle scraping the patty off

Nice post!

I don't enjoy making smash burgers that often, spatters a bit of oil on the stove around the pan, you see, so more cleanup later. I more often grill them instead, but there is nothing else like those lacey crispy "butterburger" style smash burger.
