I love Japan and their food, being there, awesome culture and people.
But their curry sucks, specially those tablets. Not even restaurants versions save it. Any cheap Indian,Thai, whatever curry in your city is superior to the best Japanese curry.

The box instructions are fine, you get a good texture and the curry mix alone carries the flavor. It's fuckin stew, do you really need a manual?

Use it to make curry sauce for katsu and rice (rather than a Japanese curry). The trick is to add a lot of flavors yourself. I grate garlic, ginger, onion, carrot, potato, and apple prior to getting started. Onion, carrot, ginger, and garlic gets sauteed in butter for 3-5 minutes or until fragrant and tender. I'll add 3.5c of liquid (some combo of water/stock, usually) and turn up the heat. In goes the grated apple, and then I mix in the curry blocks and let it simmer for about 10 minutes. Then in goes the potato for some extra thickening and another 10 minutes. I flavor it at the end with soy sauce and worcestershire, then drizzle it heavily over panko-breaded chicken and white rice and then top it with diced green onion. If I want a little kick, I'll add a spoon of sambal to the plate, too.

With everything grated, it's just a thick sauce without any chunks or even hard pieces, but all the veg and extra seasoning really takes it to another level.

Literally follow the instructions on the box.

I recommend using stock instead of water, though.

Brown some meat then remove it, saute onions and carrots and such, combine them in the pot and add water to above everything. Bring it to a boil then skim the foam. Put it on low and cover it for 45 minutes then add the curry blocks to that and stir it until it's smooth and thick. At that point it's done unless you want to add finishing touches like extra curry powder or honey or a dash of tonkatsu sauce. There are Japanese housewife blog recipes around online for this. It's the spaghetti of Japan

S&B has a few alternative recipes to make with their curry roux blocks on their web page.

Alright lads figured I'd report back, I followed the advice and listened to the box (kinda), the box called for potatoes and onion but seemed like a bad match with chicken, so I put in:
>chicken
>little bit of chicken fond
>spring onions
>carrots
>the curry block
>honey
It's great, considering it's 5 fucking ingredients (not counting the curry block) and the "work" is just cutting and browning the ingredients, this is an amazing result. I'll try more advanced stuff with it in the future.

The tip about the honey was a good one, rounded off the flavor just right. Sadly didn't have any apples this time but will try next time.

you can't cook or analyze flavors.

it already has sugar in it yet you need honey to "round off" the flavor? are you sure you aren't just fat?
