There's no cream in carbonara and there's only one way to make it. This whole "oh it's so versatile" bullshit is just flat out incorrect.

-Boil thin spaghetti to al dente in very well salted water. Save 1/2 cup water for later.
-Fry up lardons till they're crisp but not dry
-Take 6 egg yolks and whisk them with 2 oz of parm, fresh, grated
-add a fuck ton of black pepper
-whisk in 2 tablespoons of the lardon fat and then slowly stream in 1/4 cup of pasta water
-if it's still too thick, add a little more at a time until creamy
-taste for salt
-place pasta into the bowl with the sauce and using tongs, twist and toss until all noodles are coated
-serve with lardons on top, fresh cracked pepper, and a little more grated parm

There's no garlic or cream or parsley or whatever else. It's literally bacon and eggs with cheese.
