Pineapple is one of the dankest fruits. Eat it plain, put it in smoothies, salads, eat with cheese, make shish kebabs with pineapple, Haloumi, capsicum, mushrooms, red onion, and beef, burst with oil, season with salt pepper and chilli flakes and BBQ.

Haven’t used pineapple for cooking enough, but if I was going to use it for something simple, i’d probably put some slices on a salmon filet and bake it. Maybe also try using it in a stir fry, but I’m not a huge fan of cooked pineapple.

Pineapple is at worst “ok”

Chop up chunks of steak, onion, bell peppers, jalapeno and fry them in coconut butter. Add a fuck ton of cayenne and various spices.

Towards the end, throw in chunks of diced pineapple until the peppery meat fond is soaked into them and they turn orange and spicy.

Coconut cream, shallot, garlic, ginger, roasted prawn paste, red chilli, coriander seed, white pepper, sour tamarind, tinned pineapple in juice, prawns, red and green bell peppers, lime leaves and jaggery.
