In fact, here's a recipe I made recently

200 g venison, cut into cubes
20 ml olive oil
80 g onion, diced
1 clove garlic chopped
pinch dried thyme, dried marjoram
150 g mushrooms sliced
20 g all-purpose flour
50 g dark lager
200 ml venison stock
Salt and pepper to taste

- brown venison & remove
- add onion, garlic and herbs and cook for 3 minutes or until browned
- add mushrooms, cover and cook, stirring occasionally for 2-3 minutes
- add remaining oil to pan and stir in flour to coat mushrooms
- add beer and then the stock, stirring each time so that the paste is incorporated into the liquid
- simmer

I made mine into a pot pie but you could just eat it by itself. Feel free to add carrots/potatoes.

There’s this meat dressing I’ve only been able to find in Quebec; no bread, just meat, potatoes, onions, and peppers.
It’s so much better than conventional bread stuffing I can never go back.
Stovetop tastes like thick sinus drippage in comparison.
