As some of you may know. There is an issue with finding bread at stores. I purchased some flour, and yeast packets, and I located some recipes. So far I have tried 4 batches, all of which have turned out completely different even though I am pretty sure I do the same thing. None of them are really edible, and I've used all my yeast packets.

Help, please.

Take a bowl throw in a little warm water. Add a pinch of flour and some sugar throw in some yeast. Let it sit a minute. Once its bubbly keep adding in flour till it become a dough that you can knead. Throw in a little salt. Cover the bowl with plastic wrap and let it sit out for a few hours or overnight. Then heat your oven to 425 throw the dough onto a pan and bake it for a half hour.

If your out of yeast you pretty much have to do this.
You could make a kinda flatbread with baking powder. Or you could try beer bread I've heard that might work.

I can follow recipes. I literally do the exact same thing. I add the ingredients as instructed. The dough is different every time. One batch was sticky, one was very dry, one was gooey. I DO IT EXACTLY THE SAME GOD DAMNIT

you're most likely not working the dough enough or adding too much flour. the yeast is pretty pointless to weigh out because it grows and you can even use half as much as you need. unless you weigh out your ingredients, the best way to make bread is to work it by hand some. use the mixer first and finish it by hand or just do it all by hand. you'll get a feel for the consistency which is best pretty quick.

the duration and aggression of the kneading makes all the difference in how bread turns out, unless you're a baker or have been baking for years you will not have any consistency. you have to learn. until then, enjoy your shitty breads.

Pizza Dough, the superior bread:

1.5 cups of King Arthur all purpose flour
.5 cups King Arthur bread flour
1/4 tsp baking powder
yeast: idk i sprinkle some in, maybe like 1/2 tsp.
sugar: 1 tablespoon
1/4 tsp salt
butter or olive oil: idk like 1/2 of a "cube sized" cut where the width equals the height of the butter, or a splash of olive oil, maybe a tablespoon idk

Throw the dry ingredients in a mixer. Pour in 1/2 a cup of warm water onto the yeast and mix it. Pour the melted butter or add the olive oil to the side as its mixing so it kinda coats the outside. Now you have a kinda oily ball of dough. If its a little wet, thats ok.

Wait at least 1 hour. You could also put it in the fridge overnight, it will rise in volume. You can use a bit more yeast if you need it quickly and a bit less if you're letting it rise overnight.

Dough fluffed up a bit, flour the surface of a wooden cutting board or whatever, and pour a bit on the edges and knead the dough. Roll it out and smush it down so it makes a roundish shape. If dough is too wet and tough to work with add a bit more flour and remember for next time.

Add your sauce and cheese and whatever throw it in the oven at 400 - 425 for about 20-23 minutes.

Once you master this bread will be easy
