well either way there is still the hypothetical precondition that you have the initial state of the object at the same time. they do mention a "transporter buffer" - maybe even a small amount of organic material data is far too large for even their superior databanks to store it feasibly.

in any case it's a moot point because the transporter was just invented in the writer's room because they didn't have the budget to film a shuttle landing sequence. also star trek is babby's first sci-fi where they have routinely (even since TOS) hand-waved things with nonsensical jargon and left it up to the nerds to justify it
