Consistency and typically cheaper by and by. There are some local restaurants that serve better food but they are almost always more expensive or the quality control is manic at best depending on what felons are cooking that evening. You eat at an olive garden in new york and can usually expect the same taste and price in montana. Ma&Pa locations are a crap shoot you have to invest multiple meals to get a fix on what is good or not. Chains you must do it as well but then going forward you can go anywhere and apply that knowledge.

A chain restaurant provides a minimal standard of food. That's it. If you want better quality, you have to go elsewhere.

Of course, mom and pop restaurants depend on the particular mom and pop who own and operate the restaurant. If they are good, their restaurants will put any chain restaurant to shame.
