Dear transatlantic buddies
I'm actually quite curious as to what you regional (No idea if that has to be at state or county or rown level) cuisine looks like, if you would be so kind as to share it with me I'd be super thankful.
Please do not use this thread for another type of American-European shitflinging, that stuff gets tiresome as fuck.
Pic related is a regional delicacy from where I live, it's a dried and spiced sausage from made from locally shot game. I think the concept of dried sausage in this form came from South African farmers and I'm very thankful to them for this delicacy, goes great with some booze.

Cincinnati has two major things. One is goetta, a sausage made from ground pork, oats and a variety of spices. The other one is this, Cincinnati Chili, which has been posted here before with "do Americans really", and it looks about the same way in as it does out, and receives mixed reactions through the entirety of the nation. Why?

Because Cincinnati chili is not normal chili. It is closer to Greek and Macedonian dishes which involve ground meat seasoned with cinnamon in a tomato-based sauce (the tomato doesn't really come through, the spices do). The fact it's called chili means that everyone freaks the fuck out, because this clearly isn't chili. But it is absolutely delicious, a flavorful, complex, rich meat sauce.

I live in Seattle. We have a LOT of immigrants here, so there's tons and tons of food options to choose from. It's actually really nice. Anything you're in the mood for, you can usually find a place that serves it.

We have a lot of Salmon and Seafood here, so if you're looking for a seafood feast, you'll get pretty lucky if you know where to look. There's a sports bar in northern Seattle that serves all-you-can-eat Dungeness Crabs on Monday. It's expensive but the crab meat is sweet and tender and the lemon and butter you dip it into is luxurious. I always leave stuffed to gills.

Lord, that's a whole new thread on it's own. Seattle is HUGE on beer and wines. TONS of local breweries and vineyards and every single flavor under the sun you can imagine. One of the tastiest I've had was a dark lager with Pecan flavor. It was thick and creamy almost a meal by itself. Exquisite.

We also have garbage, like Rainier. It's basically watered down piss, but it's got a cult following.

Space Coast Florida here, what we have here locally is a mixture of Vietnamese and Latin cuisine on the cheap. But the American cuusine we have would probably have to be fried gator with spicy mayo and any fish/seafood dish you could think of. Mahi mahi sandwiches are the bomb not to mention some Southern classics we have without having Southern culture. Our bbq is focused around pulled pork and ribs with baked beans garlic toast and lots of sauce. If you visit Florida I highly recommend trying as much gator as you can, tastes like chicken.

Alot of people are post fried garbage itt. Growing up in North Dakota and Montana we never ate fried foods. Mainly simple dishes like roast beef with carrots onions celery in a pot, baked potatoes, potato soup, baked fish, various pasta dishes, shrimp, steak, ham, turkey, and a lot of baked chicken with rice. Burgers were actually pretty rare and we hardly ever ate out at all (even less since we discovered most of us are celiac).

We'd occasionally make lefse which was a nice treat. Making it gluten free is hard now.

Pic related is a low country boil. Low country, or lowcountry, is the coast line of South Carolina and Georgia. It's full of warm water ocean seafood and it's pretty tasty. I grew up in the Pacific Northwest, so I'm used to seafood, but living down here has been fun. We have something similar to a boil up in the PNW, but this is about the LCB.

Fresh ingredients are key, so you want stuff that you've just pulled out of the ground and the ocean, except the sausage obvs. Ingredients are simple: ear sweet corn cut into thirds or quarters, baby potatoes, shrimp, crab, and sausage. Herbs, aromatics, and seasonings to taste. You put all that into one giant pot and boil it in stages. Pull it out, dust it with your seasonings, let the juice and seasonings drain out and become a jus. Then you find a big picnic table outside, spread a bunch of newspapers down and dump everything out on the table.

Get a bunch of friends and family around it and everyone shares the food, drinks, and just hands out. It's tasty and social. One of my favorite food related experiences.

I'm from San Diego California. I don't have much experience with "regional" foods elsewhere in the US, and we don't really have a substantial food culture here. The closest thing to regional cuisine we have is Mexican food (tex-mex, but veers more to the mex because of so many immigrants), typically obtained from a cheap local restaurant or stand, or In-N-Out Burger, which really only exists in CA despite its global fame.

Mexican food is very nice. It's filled with refried beans, salsa, cheese, rice, and frequently involves lots of grilled meats and fried tortillas. National Tex-Mex foods are a decent substitute but not quite as good as fresh real stuff from local hole-in-the-walls.
In-N-Out is a really fresh salty burger made from high quality beef, like a steakburger but thin. They are often served with grilled diced onions (animal style) and something called "spread" that's really just thousand island dressing. Nevertheless when you have an In-n-out burger, whether you like or it hate it, it will change your perspective on hamburgers.

North Carolina, Kill Devil Hills to be specific. Our big food (aside from some good seafood), is pulled pork BBQ. Depending on where you are in the state, East or West, you will find a general preference for a smooth smoky style, or a more tangy style, that said, I love them both.

Its pretty different from the city generally. Especially food-wise. Up here there is a definite hunting and fishing culture, but not the same ethnic diversity of the City.

A very common food is freshly caught lakefish, most commonly Walleye, battered and fried and served with slaw and lemon. Similar to fish and chips as the Brits do it, but the Walleye gives the dish a different taste. In restaurants you're more likely to get haddock, which makes it essentially an American version of fish and chips.
Game like venison and turkey are also popular to hunt and eat.
Outside of this sponge candy (pic related) is a common treat around Valentines Day. Its not unique to the area but its moderately rare outside of it in my experience. Its basically toffee that is leavened to give it a light and crispy texture.
Finally the beef on weck sandwich is a common dinner. Its roast beef + horseradish + au jus + kummelweck roll (chewy roll with coarse salt and caraway). With some pickles and chips on the side its a top tier meal.

Texas is enormous and has completely different cultures, although pretty much everyone but the crazy fucks who move here from califoria all love it. Up north in the panhandle they're basically okies, but we take mercy on them and pretend they're not. Lots of east Texas is pretty much Louisiana, they're eating crawfish and gumbo. Houston has every type of food there is. The DFW area has lots of Chinese food and lots of steak, although its painfully dull there. Along the cost there's lots of seafood, I've had some great meals near Corpus, blackened redfish is delicious. There's also a lot of fried catfish all throughout the state, near the rivers. There's a whole bunch of great food down south in the border regions, lots of places with proper Mexican food down there. West Texas is a desert, there's nothing there but oil and cattle. The hillcountry is my favorite place in the world, beautiful rolling hills, wildflower blooms all throughout spring, and everything from great German food to the best bbq you'll ever eat. Lots of nice towns, some with some really great historical architecture, old by US standards, not by Euro standards though I'm sure. A lot of people shit on Austin, and it is a weird and often disgusting place, but there's some great food there too, and a lot of great beer from that area, although they're a bit too fond of IPAs in my opinion, that gets old after a while. If you ever want a nice drive, the area around Marble Falls, Johnson City and Fredricksburg is really beautiful.

Luckily come from Portland, Maine. Some of the best food in the country according to many different write ups. Obviously we eat tons of fresh, high quality seafood, and having those ingredients available in bulk brought a lot of japanese industry and influence. Anons have already posted Tex-Mex and Texas-style BBQ so I'll post a very regional food that only very recently became common outside of small town central Texas: the Kolache (or formally Klobásník).

Basically a bunch of Czech immigrants migrated to the Texas Hill Country in the late 19th century, and they took one of their traditional open-faced desert pastry's with fruit/jam in the middle and instead stuffed it full of eggs/bacon/jalapenos/chorizo etc and fully enclosed it. The result is a breakfast taco like interior but the outside dough is incredibly soft, light, and slightly sweet. There are hundreds of variations of them, and every small central Texas town has at least one dedicated Kolache food stand or bakery that's been around forever, often near the town square. Recently Kolache bakery chains have opened up and started selling Kolaches in other states and crude approximations of Kolaches are available in grocery stores but not even a decade ago pretty much the only reliable way to get one was a rural road side food cart.
