The only reason I can see it tasting better is because of the vinegary shit in mayo to balance out the fattiness, but that's why some people like to eat it with pickles, or dip it in mustard or ketchup. Browned butter has a lot of good flavor that you're missing out by using mayo.

Using butter in the pan is good, using mayo on the bread is good as well. I find it’s very beneficial to use mayo when you aren’t using a regular pan (such as in a panini maker or something similar), but overall the difference is just preference.

It's just a way to make the grilled cheese with less fat than the pat of butter you melt in the skillet.
Of course you could also just spread a thin layer of softened butter on the bread instead of the mayo.
