Hi /ck/ I like gumbo, cajun chicken and sausage gumbo specifically. Ive been making gumbo the past few months. I never refrigerate it after Ive cooked it, I always just leave it in the pot on the stove and eat it over the next few days, I do this with alot of foods and it has never made me ill. This gumbo I made recently has been in the pot for 5 days now which is the longest I have left one in there. It smells absolutely fine yet when I checked google it was saying gumbo can spoil if left out even just a few hours? and should be refrigerated and used within 3 days. Is this just people covering their ass more than necessary? Can gumbo smell fine and still be spoiled?

Bacteria has been growing in your pot the last few days. I’m not saying you shouldn’t eat it, as not all bacteria growth is going to get you ill, especially if your meats are super salty and full of preservatives. I’d probably add a bit more sauce and heat it up again though just for peace of mind. As a Petty Officer I remember I smuggled in a bag of quarter pounders right before we left port and ate one a day for 6 days. They were just sitting in my sea bag under my rack in humid ship air and I didn’t get sick.

I got violently ill from eating reheated lentil stew that I made like two days before that (kept it in the refrigerator the whole time). I thought it was odd because I ate way older and worse stuff in the past but somehow that one got me. Sometimes you get unlucky and the diarrhea bacteria grow faster than anticipated, I guess.

Yes it’s that simple really. There is so much bacteria entering our body everyday from our hands, breathing, and eating and all it takes is one type to get through and multiply for your body to decide to flush everything out with brown chaos.

5 days seems risky. A couple days is probably safe. Remember, prior to refrigeration people left stuff out all the time.

if you bring the pot back up to a simmer and cook it for 10 minutes or so everytime you eat some you'll probably be fine
