This is what matters the most with a patty melt. You don't want much, if any, color left in the meat as you don't want it to sog up. The cheese has to be melty, the onions have to be richly caramelized and soft, and the toast has to be well-buttered and browned, then wrapped in paper or foil to slightly soften. When it's all done it's this warm, rich, gooey sandwich that doesn't have any need for condiments or fresh toppings.
