I eat medium rare if I know the provenance of the meat or if it's a respectable establishment. Otherwise it's well done. I don't care if people look at me funny. It's my food for which I payed. If I want my steak boiled in orange juice, I'll order that.

I am a low-level restaurant manager. Menus are decided by upper management or corporate. They're probably not in the building more than once a month.

That waiter knows who is on the line, what's going on with the food that day and and whether or not cooks are retarded enough to not spot mold or other obvious blemishes on what they're preparing.

For example, last year our refrigerator died in the middle of the night. I threw out basically all the meat product. However, one of my co-managers resisted. He said "nah man, that lobster was frozen yesterday. Look it still smells fine." The lobster was room-temp to the touch.

That waiter may have witnessed something like that where thd other mgr didn't throw it out, because they'd get reamed for dumping $120 of potentially-good lobster.
