If I remember correctly, there's literally one jellied eel shop left in the UK. It used to be eaten because it was cheap and could keep for a few days. Much like how bottom feeders like lobster was cheap, or ox-tail, except those are actually good and stuck around - got expensive, even.
We don't eat jellied eels, and I have no idea what's going on with that green goop on the left (but some buttery mashed potatoes and a savoury pie is pretty normal and tasty to us).
