Just as a pure cut of meat of the common varieties, I'd have to go with beef > pork > lamb > chicken. But when it comes to variety of preparation, I think pork edges out beef. I can't lump fish into one group, too many individual species and preparations. I will say that for me crustaceans > shellfish > saltwater fish > freshwater fish.

If you rate fish or seafood low chances are you've just never had good seafood cooked properly, which you can only get in Asia.

Crabs, lobsters, abalone, mussels, clams (normal, razor), geoducks, shrimp (normal, mantis), oysters, langoustines, crayfish, scallops - yup shellfish wins it's not even a competition. Fish is great too, but need to be cooked properly. The only fish western cuisine gets remotely right is seared salmon.

There is nothing like the flavour of beef, especially if it's reasonably fatty. The fat literally tastes like butter. Mutton has a huge delicious flavour, but you have to have a taste for it, otherwise lamb is better. Pork is in a tier of its own because the fat is really nice and there's a lot of it, but the lean meat has almost no flavour. Chicken and duck are good but they just don't match the others. The lean meat is flavourless (chicken) or slightly bad tasting (duck), but the skin is good on both. All are delicious if cooked in the right way but in terms of the meats natural assets, this is the true tier list.

The best seafood in the states are probably one of the many buffets in Las Vegas, the seafood there most closely resembles seafood in Asia, but there have been good and bad ones.

I’ve had soya sauce chicken as soft and succulent and flavor full as a sizzled skirt steak.
I’ve had Berkshire pork chashu for ramen and it would beat any steak in terms of carmalized top and fatty yeah steaky texture.
A bronzing cooked in a wood fire oven could be eaten just with salt and lemon, with crispy skin and soft meat .
Above all, I had goat chops from a baby goat who was bred for this 250 dollar plate dinner that was literally the best meat I ever had ever

Fine dining steak is always great but when I look back at all of the meat I had at higher tier restaraunts, it all kind of all levels out to the same tier imo
