Many (maybe most?) modern Italian dishes are recent creations, and much of the country was insanely poor in the 1800's with people eating acorns and shit to survive leading to one of the major Italian diasporas to America in the late 1800's. Things like polenta and gnocchi stretched with whatever they could get their hands on were considered poverty foods for poors until more recently.
