While it's true that sometimes black olives are artifically blackened, some of the best olives are pretty dark in color. Check out these "arbequinas" as they fell from the tree.

Needless to say, they are quite expensive unless you're from Italy, Spain or Greece, where those are pretty much a national dish (if I recall correctly, Spain comes 1st in olive production worldwide).
