I'm heating up some water for some beans right now to add to some chili. It'll be a mix of kidney beans and black beans but first I have look through them for debris and stones. They're from Goya which is a good company but even say write on the their packaging to look through them.

The base of chili is red because of the peppers used, anchos, guajillo, whatever ones you want. Rehydrate the chili's and blend them with beef broth, very similar to traditional mole sauces
This is then cooked with beef and bam, you've got a chili. Aromatics like fresh chili's and onions are also very often used. I make this chili sauce in bulk and freeze it, so making chili is a simple quick meal. It freezes very well.

During the 60's there was a thing about making dishes based on your ancestor's food, even if it wasn't authentic.

It's cheap cuts of meat that are ground up and stewed so no one can tell they're 90% gristle, then overloaded with chili peppers so that no one can taste the poor quality of the meat either.
