This is a common misconception. Pellet smoker have a few quirks and tricks that most people don’t know about. The first is that pellet smokers do not delivering smokey flavors. This is usually caused by using cheap wood pellets that infuse a filler wood with scented oils, hickory oil, maple oil etc etc. if you buy better brands your pellets will be made of the real wood rather than oil soaked filler wood. They cost a bit more but it’s obviously worth it. The next issue is that the hotter a pellet smoker runs, the less smoke it produces. The pellets start burning cleaner as more fuel is added to stoke the fire higher and raise the smoker’s temp. The way to get around this is to set the pellet smoker to its lowest heat setting, usually 150f. At that low temp the pellets will smolder rather than outright burn. This creates a significant amount of smoke that will penetrate the meat while it’s still cool and is most absorbent. You do this for about 30 minutes then turn your smoker up to the real cooking temp and start your normal smoking process.
